Nutty Peanut Butter Cookies



I have had a lot going on lately. I'm trying to make some serious life/career decisions. I felt the need for some simple, old fashioned comfort food to soothe me. What could be more comforting than peanut butter cookies?

Nutty Peanut Butter Cookies

Ingredients:
2 cups all-purpose flour
3/4 cup softened butter
3/4 cup peanut butter, chunky or smooth
3/4 cup granulated sugar
3/4 cup light brown sugar, firmly packed
¼ cup chopped fresh peanuts (optional)
2 large eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Directions:
In a large bowl, stir together flour, baking soda, baking powder, and salt.
In a separate bowl, beat together the butter, peanut butter, and sugars until light and fluffy. Beat in eggs and vanilla. Add the chopped peanuts, and gradually add in the flour mixture until well mixed.
Wrap dough in plastic wrap and refrigerate until chilled, at least 2 hours.
Take tablespoonfuls of dough and roll into balls. Place about 3 inches apart on non stick baking sheets. Using a dinner fork, lightly press cookies to form a criss-cross pattern.
(I like to stick an almond or even a Hershey’s Kiss in the center of my cookies!)
Bake at 375° until golden brown, or about 10 to 12 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
Makes about 4 dozen cookies. Try not to eat all at once!

  3. Wow, I could use a couple of these right now. I love your blog name! I have to admit, until a year ago, that was totally my boyfriend and I! Thankfully, I've learned to navigate the kitchen a little better since then. :)
