Oatmeal, Raisin, Walnut Cookies
I'm not a big sweets eater, my favorite treat is cheese, but every now and then I like a little something. Since my husband doesn't necessarily enjoy baking, this is when I actually have to go into the kitchen.
I am not sure where this recipe came from, it is hand written on an index card that has been in one of my cook books forever, and it is one of our favorites.
Ingredients: makes about 4 dozen
Oatmeal Raisin & Walnut Cookies
Ingredients: makes about 4 dozen
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp salt
1 tsp baking soda3 cups Quaker® Oats
1 cup raisins
1/2 cup chopped walnuts
Preparation:
Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, raisins and walnuts, mix well.
Drop dough by rounded spoonfuls onto ungreased cookie sheets.
Bake about 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Can be frozen, but they're best fresh and warm with a glass of milk!

ReplyDeleteMy husband is not much of a sweets person, well, baked sweets anyway, but when he asks for cookies, Oatmeal is always the first request. And it must include raisins and walnuts! I'll give these a go and surprise him when he arrives home from his trip!
