Easy Cheese and Herb Drop Biscuits


Yes, they are as good as they look!

We made these biscuits over a week ago, and I am just now getting around to writing about them. 

I combined a few different recipes on-line and made it with crumbled blue cheese, but next time we will make it with cheddar. I also might add a little bit more herbs. 

The texture and consistency was perfect, and these biscuits went perfect with Garlic Mashed Potatoes and Scrumptious Salmon. They even tasted great with my scrambled eggs in the morning!


Makes 12 biscuits


2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
2 teaspoons sugar
3/4 teaspoon baking soda
1 teaspoon salt
6 tablespoons (3/4 stick or 3 ounces) cold unsalted butter, cut into 1/2-inch cubes
2 cups crumbled blue cheese (or try shredded cheddar)
1/4 cup fresh finely chopped herbs (consider parsley, scallions, rosemary, or chives) 
1 cup well-shaken buttermilk


Preheat oven to 450°F. Whisk together flour, baking powder, sugar, baking soda, and salt in a bowl, then blend in butter with your fingertips until mixture resembles coarse meal. Stir in cheese and herbs. Add buttermilk and stir until combined.

Drop dough in 12 equal mounds about 2 inches apart onto a buttered large baking sheet, or one lined with parchment paper. Bake in middle of oven until golden, 16 to 20 minutes. Best served while warm.
