Oops, I just noticed, I forgot the corn!
Taco salad is one of my all time favorite meals. A light, quick and easy salad that is also pretty inexpensive to make. Even I can make this one!
All ingredient quantities can be adjusted to your preference. This recipe will serve at least 4.
1 lb. ground beef, browned and cooled
About 3 cups chopped Romaine lettuce
1 avocado sliced into bite sizes
1 tomato diced
1 can red kidney beans
1/4 cup diced onion (red or green)
1/2 cup shredded cheddar cheese
6 oz. canned corn
Tortilla chips to garnish
I like to toss El Torito's Cilantro Pepita Caesar dressing on this salad, but it's also good with olive oil, salt, pepper and lime juice.
