Lentils with spinach shown with tikka masala chicken and naan bread
We LOVE Indian food. But the spices and ingredients are not always easy to find in a regular grocery store and often the recipes are very labor and time intensive. We found this fantastic simple recipe for Lentils with Spinach, and the chicken is leftover from the whole chicken we baked the night before, mixed with a jar of tikka masala that I found at World Market. Add some naan bread and you have fast, easy and delicious Indian food at home!
1 white onion, sliced in half then into 1/2 rings
2-3 cloves minced garlic
1/4 cup lentils
1 cup water
2-3 cups fresh chopped spinach
1/2 tsp. salt
1/2 tsp. ground cumin
Fresh ground pepper
Heat oil in a heavy pan over medium heat. Saute onion slices for about 8 minutes, then add the minced garlic and saute together for a few more minutes.
Add lentils and water to the saucepan. Bring mixture to a boil. Lower heat, add spinach and cumin, salt and pepper to taste. Cover for about 30 to 35 minutes until lentils and spinach are soft.
Makes 2 servings
