Salmon with Wilted Spinach

We love this recipe. It's simple, easy, mild and it's healthy.

1/4 cup orange juice
3 tbsp. olive oil
2 tsp. dried thyme leaves
2 lbs. salmon fillets
1 tbsp. brown sugar
1 tbsp. smoked paprika
1 tsp. cinnamon
1 tsp. grated orange zest
Salt and pepper
1 bag or 12 oz. fresh cleaned spinach leaves

Mix orange juice, 2 tbsp. of the olive oil and 1 tsp. of thyme in a small bowl. Put salmon in a glass dish with marinade and turn to coat. Cover and refrigerate for 1 hour.

Preheat oven to 400

Mix together brown sugar, smoked paprika, cinnamon, orange zest, 1 tsp. of thyme, and salt.

Remove salmon from the marinade and place on a pan lined with foil and sprayed with olive oil & discard the remaining marinade.

Rub the smoked paprika mixture all over the top of the salmon. Bake for about 15 minutes or until fish flakes easily with a fork.

While fish is cooking, heat 1 tbsp. olive oil, add spinach, a pinch of salt and black pepper. Cook for about 2 to 3 minutes or until spinach is wilted. Serve salmon over spinach.
