Steelhead Trout


Have you discovered steelhead trout? If you have not tried this incredible fish yet, you are missing out.

Most people mistake steelhead trout for salmon, you really can't  tell the difference by looking at it. It is a meaty, pinkish fish just like salmon,  it even tastes similar. With the declining wild salmon population these days,  this is the perfect alternative.  

I couldn't find an abundance of recipes for steelhead trout, but really any of the salmon recipes will work, and there are millions of those.

For the dish you see above, marinate one Steelhead Trout fillet, with skin on, with the juice of half a lemon, olive oil, parsley, salt and pepper for about an hour in the refrigerator.

I think it's great wrapped in foil packets with olive oil, rosemary and lemon and cooked on the grill. But since the grill was out of propane, so we laid the marinated fillet on top of a bed of red chard, onions, leeks and tomatoes, and baked the whole dish for at 400 degrees for about 8 minutes. Remove skin before serving.

Note: Try a little bit of pesto or parsley mint sauce on top!
