Cilantro Dressing
We LOVE cilantro. We tried to grow it in the backyard but it never really took off. So, we are forced to buy it in big bunches, which is usually way too much for the two of us to eat before it goes bad.
I think I finally found the perfect way to use the rest of the bunch. This cilantro dressing packs just enough punch to make it interesting. The beauty of making your own dressing is that it is so easy to adjust the recipe to your own liking.
Although I have never written down the exact recipe, I think this will get you close, then it can easily be adjusted.
1/2 cup cilantro
1/4 cup olive oil
1 or 2 cloves of garlic
1 tbsp honey
Juice from1/2 lemon or 1 lime 2 tsp jalapeno pepper, seeded finely chopped
Cayenne pepper (optional)
Salt and pepper
There are not a lot of instructions, simply toss it all in a food processor and blend well. Adjust if necessary.
This is fabulous on a chopped green salad mixed with fresh herbs and lots of cilantro and tomatoes!
Yummm, that must be delicious. I'm all for make your own dressing. So much better than the fake ones.
