Roasted Potatoes with Herbs

Here's a simple and inexpensive recipe for a delicious potato dish that compliments many main courses.

4-5 small potatoes
1/2 yellow onion sliced into half rings
Fresh or dried rosemary
1/2 tbsp. dried thyme
1/2 tbsp. oregano
2 tbsp. olive oil
Salt and pepper

Preheat oven to 425. Chop new or red potatoes into bite sized pieces and put into a medium casserole dish. Add onion slices and drizzle with olive oil. Sprinkle with rosemary, oregano, thyme, salt and black pepper. Mix all until potatoes are evenly coated. Roast in oven for about 40 minutes, stirring after about 25 minutes, until potatoes are soft and slighted browned.
